Being rich in anti-oxidants, Proso millet is considered to be a great 'anti-ageing' food. Proso millet is also considered a calcium superfood as it contains some of the highest amounts of absorbable calcium among all foods. It has also been associated with reduction of cholesterol levels, decrease the risk of cancer and prevent gall stones. Proso millet can be tossed into salads, stir fried with vegetables and tofu or just be eaten for breakfast with some milk and honey.
